Situated in the heart of Taipei with an illustrious history of making some of the best known beef noodles in Taiwan, Lin Dong Fang (林東芳) is probably one of the best known. The shop has in recent years, reinvented itself to attract not just the generations of locals who have been eating here since 1976, but also for the younger generation with higher demand for cleanliness, as well as tourists.
I first visited Lin Dong Fang a few years ago at their original shop (see Instagram post below), and immediately fell in love with their perfectly balanced recipe!
To start off, the roast beef slices are cut to the ideal thickness for the juices and flavour to be properly retained, while remaining soft and succulent with just the right amount of chunkiness.
Thanks to a secret soup recipe handed down from before the first shop went into operations, which includes a special blend of herbs, beef bones and fat, as well as a whole lot of patience (supposedly well over 20 hours), every sip of the soup will keep you wanting more.
Finally, the noodles. At first glance, one will be quick to assume that it’ll be starchy and ‘heavy’, but with one quick slurrrrrrp, you’ll be pleasantly surprised to find it rather ‘light’ with just the right texture and chewiness.
